lemon ricotta pancakes and a day at the market

there's nothing like two months on a farm surrounded by opera singers to make you appreciate how much of an introvert you like to be! i'm currently having a beautiful time at my cottage relaxing, cooking delicious things, and basking in the quietness of country life. today was a day for lemon ricotta pancakes and farmer's markets.

as for the lemon ricotta pancakes, my mum and i have tried out various recipes in search for the perfect one after sampling sarabeth's in NYC's little pieces of heaven. the best recipe i've found has been this william sonoma one. you just have to be a little patient with separating your yolks and egg whites, making sure everything is room temperature and zesting and juicing a lemon. yum yum yum!

for the rest of the day, i'm hoping for some practising, another glorious sunset and maybe another grapefruit & campari cocktail, one of my favourite summer drinks.
